Happy Cinco de Mayo! Since you can’t celebrate in a restaurant this year, The 3 Amigos have shared their recipe for esquite, a Mexican street corn salad.

Ingredients:

  • Three cobs of fresh corn
  • A generous amount of tajin
  • 1/2 cup chipotle mayo
  • 1 cup sour cream
  • Queso fresco (it’s cheese, so measure with your heart.)
  • 1 bunch cilantro
  • 2 limes
  • 1 tablespoon oil
  • 1 bunch microgreens
  • 1 radish

Esquite Recipe:

  • Heat up your pan on medium-high. Add oil.
  • Cut corn off the cob into a bowl.
  • Add corn to oil, stirring frequently. Season with tajin.
  • While that cooks, add chipotle mayo, sour cream, chopped cilantro, tajin, and lime juice into a bowl.
  • Once your corn is cooked, add it to your bowl with your other ingredients.
  • Blend until fully coated.
  • Serve immediately. Garnish with a squeeze of fresh lime juice, cilantro, microgreens, and radish. Enjoy with your favourite tortilla chips!
